Orange Yogurt Cake

In my freezer, I have some yogurt that I made and need to use up.  This cake will go in the lunches made for school tomorrow.  The recipe is adapted from thekitchn.com. Thinking of using this to make some Chocolate Orange Cake Balls.  We will see....

Ingredients:
1 1/2 cup plain yogurt
2/3 cup oil
1 1/4 cup sugar
3 eggs
1 tsp orange extract
2 1/2 cup flour
2 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt

Preheat oven to 350 degrees.  In a large bowl, mix very well with a mixer the yogurt, oil, sugar, eggs, and orange extract for about a minute.  Then, add the flour, baking powder, baking soda, and salt; stir well.

Line your 9x13 pan with parchment paper, and pour the batter into the pan.  Bake for about 30 minutes.

This is a very moist cake with a hint of orange.  Or you may substitute vanilla extract in place of the orange flavoring.
