Pancakes

Just made some pancakes the other day.  One of my boys has a sore mouth from getting braces put on & needed something soft to eat, yet filling.  Made two plain batches & a cinnamon sugar batch.  Nice to have some extras in the fridge.

Pancakes

2 cups flour
1 Tbs baking powder
1 tsp salt
1 3/4 milk
1 tsp lemon juice
1 tsp baking soda
1 egg
1 tsp vanilla (optional)

Measure milk & add lemon juice, let sit for just a minute.  Separately, combine all dry ingredients together.  Then, stir in the wet ingredients to the dry ingredients & mix well.   Pour about 1/4 cup of batter onto hot skillet, greased w/ veg oil or cooking spray.  Cook until the edges are dry, flip.

Continue cooking until golden in color.

Option:  Cinnamon Sugar Pancakes
Add cinnamon sugar to batter, about 1-2 Tbs, of likeness.

  1. Hmmmm.....cinnamon sugar sounds good!! Sometimes we freeze "planned over" pancakes for fast breadfasts & snacks.

  2. I must be on a cinnamon sugar kick right now! lol Never have made it with cinnamon & sugar before. My kids used to love it when I bought the cinnamon sugar waffles! Thanks for the comment. :)
