Salisbury Steak

So, it's been about a year and a half that I've been making my own Salisbury Steak.  I used to buy it in the frozen section to feed my family of 6.  Then, I realized that all those frozen dinners are just meals made ahead of time & frozen!  OMG!  This is one of my family's favorite meals.

Earlier this week, I thought I would make a big batch for us to eat for dinner & save the rest, only I forgot to put some aside before serving it.  Ooops, we ate almost the whole thing & had a little bit for some leftovers that I portioned out.  Normally, I don't make this big of a batch for one meal.

Ingredients:
3 pounds hamburger meat
3 eggs
1/2 cup homemade bread crumbs
1/2 tsp Italian seasoning
1/2 tsp garlic salt
1/2 -1 cup milk

Sauce:
2 brown gravy packets
1/3 cup diced mushrooms

Mix all ingredients well, take a spoonful of mixture & form into patty in hand.  Place in hot oiled skillet. Add more oil as needed.  Let meat cook & flip until no more pink.

For the sauce, fix according to package & add some mushrooms.

Sour Cream Chicken Enchilada Casserole

Got this recipe earlier in the year for my son's Cinco de Mayo food bash @ school.  Made another pan for dinner to test with my family.  Previous to this recipe, I vowed that I would NEVER make Sour Cream Chicken Enchiladas again!  But, this recipe has changed my mind!  It is a family favorite.


Sour Cream Chicken Enchilada Casserole
(Modified from original recipe, Chicken Enchilada Casserole)

1 cup plain homemade yogurt
2 cups cream of chicken soup (homemade)
1/3 cup chopped green chilies
2 cups diced grilled chicken
10 flour homemade tortillas
2 cups shredded cheese
sour cream

Preheat oven to 350.  Combine plain yogurt, cream of chicken soup, green chilies, 1 cup shredded cheese, & grilled chicken in a bowl.  Spray a 9x13 pan with a nonstick spray, spoon some sauce into the bottom of pan, layer with flour tortillas & sauce, until sauce is gone.  Finish w/ sauce on top.  Top w/ the remaining shredded cheese.  Cover & bake for 30-45 minutes, or until bubbly.  (To prevent cheese from sticking to aluminum foil, spray with Pam.)  Garnish w/ sour cream.

Sweet Grilled Chicken Stir Fry

Was in the mood for some Chinese, but didn't want to buy it.  So, I took some leftover rice seasoned w/ a chicken bullion cube, carrot slithers, diced red peppers, chopped broccoli, & diced grilled chicken.   I was out of any kind of teriyaki sauce.  For best flavor, I heated the rice dish w/ the sauce.  The rice just soaked up the sauce & was very good.  This is what I came up w/:

Sweet Sesame Ginger Sauce

1/2 cup soy sauce
1/2 cup water
1/2 tsp ginger
1/3 cup sugar
1/8-1/4 tsp sesame seeds

Heat the soy sauce, water, & ginger.  Add sugar & stir 'til dissolved.  Garnish w/ desired amount of sesame seeds.  

I haven't tried it on my family, yet.  But, I am on 2nd's, & I thought I was "full!"  I think my boys will like it.


Pancakes

Just made some pancakes the other day.  One of my boys has a sore mouth from getting braces put on & needed something soft to eat, yet filling.  Made two plain batches & a cinnamon sugar batch.  Nice to have some extras in the fridge.

Pancakes

2 cups flour
1 Tbs baking powder
1 tsp salt
1 3/4 milk
1 tsp lemon juice
1 tsp baking soda
1 egg
1 tsp vanilla (optional)

Measure milk & add lemon juice, let sit for just a minute.  Separately, combine all dry ingredients together.  Then, stir in the wet ingredients to the dry ingredients & mix well.   Pour about 1/4 cup of batter onto hot skillet, greased w/ veg oil or cooking spray.  Cook until the edges are dry, flip.

Continue cooking until golden in color.

Option:  Cinnamon Sugar Pancakes
Add cinnamon sugar to batter, about 1-2 Tbs, of likeness.
